I have a simple design with two large 7-segment displays on one side and all the ballast resistors on the reverse. The 7-segment displays have space underneath so I can mount the ballast resistors under the displays with just the solder joints on the top side. As long as the board is assembled in the correct order everything will fit. How do I tell EasyPC that components mounted on the underside will not interfere with those on the top side so that they don't generate spacing errors when running DRC?

I'm guessing your PCB must be single sided, as I make double sided PCBs with components on both sides quite a lot, without DRC errors. If so, just add a lower side PCB and don't plot it for the Gerber.

No, it's a double-sided board with the ballast resistors on the bottom side. I can "accept" the errors from the DRC but they don't disappear from the screen, nor do they change colour to show that they have been "accepted".

I solved the problem by turning off "component spacing" in the DRC page. Not the best of solutions but, since I'm not going to move anything, it works.
